Since 1979, the harmonious blending of Chardonnay, Pinot Blanc and Pinot Noir grapes at each harvest recreates the blend that is the foundation of their style.

It is ideal as an aperitif, with oysters, caviar, salmon or all fish starters, mild cheese, fine antipasti or simply to enjoy on its own.

After almost 24 months on the lees, the Brut reaches its balance and is ready to be degorged. The white gold goblet has a fine, velvety perlage. The fine aromatic profile of floral notes of elderflower and hawthorn gives delicate nuances to the freshness of the fruit, between Mediterranean citrus and white and yellow fruit, with hints of herbs and almonds. The sip has joyful proportions of freshness and fruit with a lingering finish that is refined and harmonious.

The mousse of Parosé is immediately striking in its enormity and persistence in the glass, with thick, white bubbles that rise with conviction. The nose is intensely broad, without ever being weighed down by extraneous notes: this is a wine that has been expected and matured for three years. The colour is poignant, similar to a spring dawn, vaguely amber and reflective thanks to the alabaster veins. The aroma is exciting, with an intensity and density of reflections that invite meticulous analysis. On the palate, an iridescent variety of cooked fruit is perceived, alongside a lively vegetation. Hints of homemade cakes, steeped in the liqueur of festive days, also emerge. The taste experience is a feast in itself, opened by the sudden, sideways reminder of winter chestnuts, and with a crisp progression towards a lingering, enveloping finish, marked by a maturity and euphoria encased in a dry, precise embrace like that of a farewell.

The majesty of the sip is boosted by a freshness that is crisp and pressing on the palate, supported by a savouriness that underpins the creamy sip with a deep and multidimensional core of fruit, endowed with remarkable concentration and, at the same time, a tapered length on the finish with great balance. Elegant energy, subtle concentration, brilliant texture, incredibly intense persistence and great purity and precision. In the gleaming gold goblet with its fine perlage, the proportions between the dominant floral theme on the first nose with lemon blossom and verbena, and the bright fruit theme with notes of mandarin, ginger and crisp green apple are defined in the contours by menthol, pepper and saltiness nuances. The vinification in small oak barrels of the best Chardonnay grapes matured on the lees for more than 36 months supports the matter on the palate, refined by the lively citrus of bergamot with a dynamic made engaging by a crisp savouriness supported by the Extra Brut dosage, which enhances the delicate and aristocratic style of this Franciacorta.

Intensely golden, it releases at first an accessible fruitiness reminiscent of mandarin and candied ginger, but a majestic personality immediately appears, with a wealth of butterscotch and macadamia nut aromas chasing a fleeting but vibrant exotic fruitiness. The sip resounds as deep as a well of crystal-clear water, it has an elegant boldness that expresses the classic evolutionary character of chardonnay in the persistence of a rocky minerality, but without austere traits because it is sustained by the summery, sunny fruit. Creamy and enveloping, it continues to mutate in the glass in digressions between dry pastries and light candied fruits, yet with a joyful luminous freshness.
