Pappardelle Uovo are very wide Italian tagliatelle. They are usually twisted together in a net and served as a "noodle nest". The pappardelle are usually at least an inch wide. The region of origin of pappardelle is probably Tuscany, where they are served with ragùs (ragout), such as ragù cinghiale (with minced wild boar).
